Ingredients

1 cup unsalted butter, softened

1 ½ cups granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup fresh raspberries, mashed (reserve a few whole for garnish)

½ cup powdered sugar (for dusting)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy (about 3-4 minutes).

Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture, mixing until just combined.

Fold in Raspberries: Gently fold in the mashed raspberries, being careful not to overmix. This will create a beautiful marbled effect in your dough.

Scoop Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie. Top each dough ball with a whole raspberry for garnish if desired.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may still look soft, but they will firm up as they cool.

Cool and Dust: Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely. After cooling, dust with powdered sugar for a sweet finish.

Serve: Enjoy your delicious raspberry sugar cookies with a glass of milk or your favorite beverage!
