1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup raspberry preserves

1/4 cup powdered sugar (for dusting)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

      Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture and continue to mix until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

          Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

            Swirl in Raspberry Preserves: Gently fold in the raspberry preserves using a spatula. Aim for a marbled effect rather than fully mixing it in.

              Form the Cookies: Drop tablespoons of the cookie dough onto the prepared baking sheet, leaving space between each cookie for spreading.

                Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers have set.

                  Cool and Dust: Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Dust with powdered sugar before serving.
