Ingredients

1 loaf of rye bread, cubed

1 pound corned beef, chopped

1 cup sauerkraut, drained and rinsed

1 cup Swiss cheese, shredded

1 cup Thousand Island dressing (or Russian dressing)

4 large eggs

2 cups milk

1 teaspoon caraway seeds (optional)

Salt and black pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Greasing a 9x13 inch baking dish with non-stick spray or butter.

Prepare the Bread Layer: In a large mixing bowl, combine the cubed rye bread and caraway seeds (if using). Spread half of the bread cubes evenly into the prepared baking dish.

Layer the Filling: Top the bread layer with an even distribution of the chopped corned beef, followed by the sauerkraut, then the shredded Swiss cheese. Pour the remaining bread cubes over the top.

Create the Egg Mixture: In another bowl, whisk together the eggs, milk, Thousand Island dressing, salt, and black pepper until well combined.

Pour and Soak: Slowly pour the egg mixture over the layered ingredients in the baking dish, ensuring all bread pieces are well saturated. Gently press down to immerse the bread in the liquid.

Bake to Perfection: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the mixture is set.

Garnish and Serve: Allow to cool for a few minutes before slicing. Garnish with freshly chopped parsley, if desired, and serve warm.
