Roasted Apple Sage Stuffing

1 lb stale bread (preferably sourdough or whole grain), cubed

2 tablespoons olive oil

1 medium onion, diced

2 celery stalks, diced

3 cloves garlic, minced

2 medium apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1 cup vegetable or chicken broth

1/4 cup fresh sage, chopped (or 2 tablespoons dried sage)

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

1/2 cup walnuts, chopped (optional)

Salt and pepper to taste

1/2 cup dried cranberries or cherries (optional)

1/2 teaspoon ground cinnamon (optional)

2 tablespoons unsalted butter, for greasing the baking dish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Bread: Spread the cubed stale bread on a baking sheet and toast in the oven for about 10 minutes, until lightly browned and crispy. Remove and set aside to cool.

      Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and celery, cooking until the onion becomes translucent (about 5-7 minutes). Stir in the minced garlic and cook for an additional minute, until fragrant.

        Add Apples: Stir in the diced apples and cook for about 3-4 minutes until they start to soften.

          Combine Ingredients: In a large bowl, combine the toasted bread, sautéed mixture, vegetable or chicken broth, chopped sage, thyme, walnuts (if using), cranberries (if using), and cinnamon (if using). Season with salt and pepper to taste. Mix until well incorporated.

            Transfer to Dish: Grease a 9x13 inch baking dish with butter. Pour the stuffing mixture into the dish and spread it evenly. Cover with foil.

              Bake: Bake in the preheated oven for 25 minutes covered, then remove the foil and bake for an additional 15-20 minutes until the top is golden brown and slightly crisp.
