1 medium butternut squash, peeled and diced

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 pre-made flatbread or pizza dough (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1/2 cup caramelized onions (about 1 medium onion)

Fresh arugula or spinach for serving

Balsamic glaze for drizzling (optional)

Instructions
 

Preheat the oven to 400°F (200°C).

    Prepare Butternut Squash: In a large mixing bowl, toss the diced butternut squash with olive oil, salt, pepper, cinnamon, and nutmeg until evenly coated.

      Roast the Squash: Spread the seasoned squash in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until tender and lightly caramelized, tossing halfway through.

        Prepare the Flatbread: While the squash roasts, place your flatbread or pizza dough on a baking sheet or pizza stone.

          Add Cheese: Once the squash is done, spread a layer of shredded mozzarella cheese evenly over the flatbread, followed by the roasted butternut squash, caramelized onions, and crumbled feta cheese.

            Bake the Flatbread: Place the topped flatbread in the oven and bake for an additional 10-12 minutes, or until the cheese is melted and the edges of the flatbread are golden brown.

              Finish and Serve: Remove the flatbread from the oven and let it cool for a few minutes. Top with fresh arugula, drizzle with balsamic glaze if using, slice, and serve warm.
