Roasted Sweet Potato Tacos

Ingredients
  

2 large sweet potatoes, peeled and diced into 1-inch cubes

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup black beans, rinsed and drained

1 avocado, sliced

1/2 red onion, finely chopped

1 cup fresh cilantro, chopped

Juice of 1 lime

Optional toppings: crumbled queso fresco, salsa, or hot sauce

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Season the Sweet Potatoes: In a large mixing bowl, combine the diced sweet potatoes, olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Toss until the sweet potatoes are well-coated with the seasoning.

      Roast the Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until they are soft and slightly caramelized, tossing halfway through for even cooking.

        Warm the Tortillas: While the sweet potatoes are roasting, warm the tortillas in a skillet over medium heat for about 30 seconds on each side until they are pliable. Alternatively, you can wrap them in aluminum foil and place them in the oven for the last 5-10 minutes of roasting.

          Assemble the Tacos: Once the sweet potatoes are cooked, remove them from the oven. Start assembling the tacos by placing a generous spoonful of roasted sweet potatoes on each tortilla.

            Add Toppings: Top the sweet potatoes with black beans, sliced avocado, chopped red onion, and fresh cilantro. Squeeze lime juice over the top for an added zing.
