Roasted Tomato and White Bean Toast

2 cups cherry tomatoes, halved

1 tablespoon olive oil

Salt and pepper, to taste

1 can (15 oz) white beans (cannellini or navy), drained and rinsed

1 clove garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon lemon juice

4 slices crusty whole-grain bread (like sourdough or ciabatta)

¼ cup fresh basil leaves, roughly chopped

Optional: red pepper flakes for heat

Optional: balsamic glaze for drizzling

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Roast the tomatoes: In a medium bowl, toss the halved cherry tomatoes with olive oil, salt, and pepper. Spread the tomatoes evenly on the prepared baking sheet. Roast in the preheated oven for about 20-25 minutes or until they are blistered and caramelized. Stir halfway through for even cooking.

      Prepare the bean mixture: While the tomatoes are roasting, in a medium bowl, combine the drained white beans, minced garlic, thyme, lemon juice, and a pinch of salt and pepper. Gently mash the beans with a fork or a potato masher, leaving some beans whole for texture. Set aside.

        Toast the bread: Heat a non-stick skillet or grill pan over medium-high heat. Lightly brush each side of the bread slices with olive oil. Toast the bread in the skillet for about 2-3 minutes per side, or until golden and crispy. (Alternatively, you can toast the bread in the oven for about 10 minutes, flipping halfway.)
