1.5 pounds sirloin steak, cut into 1-inch cubes

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon salt

1/2 teaspoon black pepper

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into chunks

Marinate the Steak: In a large bowl, whisk together the minced garlic, chopped rosemary, olive oil, balsamic vinegar, salt, and black pepper. Add the steak cubes to the marinade, making sure they are well-coated. Cover the bowl and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.

    Prepare the Vegetables: While the steak is marinating, cut the bell peppers and red onion into 1-inch pieces. This helps them cook evenly on the skewers.

      Soak the Skewers (if using wooden): If you are using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

        Assemble the Kebabs: Thread the marinated steak, bell peppers, and red onion onto the skewers, alternating between the steak and the vegetables for an appealing presentation.

          Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat the pan on the stovetop over medium-high.

            Grill the Kebabs: Place the assembled kebabs on the grill and cook for about 8-10 minutes, turning occasionally, until the steak is cooked to your desired doneness and the vegetables are slightly charred. For medium-rare, aim for an internal temperature of 130-135°F (54-57°C).
