1 cup unsalted butter, softened

½ cup powdered sugar

1 tablespoon fresh rosemary, finely chopped (plus extra for garnish)

2 cups all-purpose flour

½ teaspoon salt

½ teaspoon vanilla extract

Zest of 1 lemon (optional)

Extra granulated sugar, for sprinkling

Cream the Butter: In a large mixing bowl, cream the softened butter and powdered sugar together with a hand mixer or stand mixer on medium speed until light and fluffy, about 3-4 minutes.

    Add Flavorings: Mix in the finely chopped rosemary, vanilla extract, and lemon zest (if using) until well combined.

      Incorporate Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the flour mixture into the butter mixture, mixing on low speed until a soft dough forms.

        Chill the Dough: Turn the dough out onto a lightly floured surface and shape it into a log about 2 inches in diameter. Wrap it tightly in plastic wrap and refrigerate for at least 1 hour, or until firm.

          Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

            Slice and Shape the Cookies: Once chilled, remove the dough from the refrigerator and slice it into ¼-inch thick rounds. Arrange the cookies on the prepared baking sheets, leaving a little space between each one.

              Sprinkle Sugar: Lightly sprinkle the tops of the cookies with extra granulated sugar and a few additional chopped rosemary leaves for garnish.

                Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
