1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup carrots, diced

1 cup celery, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

1 cup chicken broth

1 cup frozen peas

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

For the Herb Biscuit Topping:

1 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, cold and cubed

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

¾ cup buttermilk

Instructions
 

Prepare the Chicken Filling:

    - In a large skillet, heat the olive oil over medium heat. Add the diced chicken thighs and cook until browned (about 5-7 minutes). Season with salt and pepper. Remove the chicken from the skillet and set aside.

      Sauté Vegetables:

        - In the same skillet, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables soften. Stir in the minced garlic and cook for an additional minute, until fragrant.

          Combine Ingredients:

            - Return the chicken to the skillet. Add the dried thyme, rosemary, and oregano. Pour in the chicken broth and bring the mixture to a gentle simmer. Cook for about 5 minutes until the broth slightly thickens. Stir in the frozen peas and remove from heat.

              Make the Biscuit Topping:

                  Add Buttermilk:
