Salmon Lettuce Wraps with Watermelon Glaze

1 lb fresh salmon fillet, skin removed

1 cup diced watermelon (seedless)

2 tbsp honey

2 tbsp soy sauce

1 tbsp rice vinegar

1/2 tsp grated ginger

1/4 tsp sea salt

1 tbsp olive oil

8 large butter or Romaine lettuce leaves

1/4 cup thinly sliced scallions

1/4 cup shredded carrots

1/4 cup chopped fresh cilantro

Lime wedges, for serving

Instructions
 

Prepare the Watermelon Glaze: In a small saucepan, combine the diced watermelon, honey, soy sauce, rice vinegar, grated ginger, and sea salt. Cook over medium heat, stirring frequently until the mixture comes to a simmer. Allow it to reduce for about 10-15 minutes, until thickened and syrupy. Remove from heat and let it cool slightly.

    Cook the Salmon: In a skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper on both sides. Place the fillets in the hot skillet and cook for about 4-5 minutes per side, or until cooked through and flakes easily with a fork. If desired, brush some of the watermelon glaze on the salmon during the last minute of cooking for extra flavor.

      Prepare the Lettuce Wraps: While the salmon is cooking, rinse the lettuce leaves under cold water and pat them dry with a paper towel. Prepare the toppings: slice the scallions, shred the carrots, and chop the cilantro.

        Assemble the Wraps: Once the salmon is cooked, remove it from the pan and let it rest for a couple of minutes. Flake the salmon into large pieces with a fork. Take a lettuce leaf and add a portion of flaked salmon, a sprinkle of scallions, shredded carrots, and fresh cilantro. Drizzle with additional watermelon glaze if desired.
