Salmon Patties with Lemon Garlic Sauce

1 lb fresh salmon fillet, skinless and boneless

1/2 cup breadcrumbs (Panko or regular)

1/4 cup finely chopped red onion

1/4 cup chopped fresh parsley

1/4 cup grated Parmesan cheese

1 large egg, beaten

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil for frying

1/4 cup mayonnaise

2 tablespoons Greek yogurt

2 tablespoons fresh lemon juice

1 clove garlic, minced

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh parsley for garnish

Prepare the Salmon: Using a sharp knife, finely chop the salmon into small pieces, or pulse it in a food processor until it is coarsely chopped (be careful not to over-process).

    Mix Ingredients: In a large mixing bowl, combine the chopped salmon, breadcrumbs, red onion, parsley, Parmesan cheese, beaten egg, Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until all ingredients are evenly combined.

      Form Patties: Scoop out about 1/4 cup of the mixture and form it into a patty. Repeat the process until all the mixture is used, usually about 8 patties.
