Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup butterscotch chips

Flaky sea salt (for sprinkling)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, using a hand mixer or stand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract until blended.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

Fold in Butterscotch Chips: Gently fold in the butterscotch chips until evenly distributed throughout the dough.

Scoop and Shape: Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.

Sprinkle with Sea Salt: Before baking, sprinkle a pinch of flaky sea salt on top of each cookie dough ball to enhance the flavor.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers still appear soft.

Cool: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Once cooled, enjoy your salted butterscotch cookies with a tall glass of milk or your favorite beverage!
