Salted Caramel Butter Bars

For the Butter Bars:

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

For the Salted Caramel Topping:

1 cup granulated sugar

6 tablespoons unsalted butter, cut into pieces

1/2 cup heavy cream

1 teaspoon sea salt

1 teaspoon vanilla extract

For Garnish:

Additional sea salt flakes

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper for easy removal.

    Make the Butter Bars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-4 minutes using a hand mixer or stand mixer.

      Add Eggs & Vanilla: Beat in the eggs one at a time, followed by the vanilla extract. Ensure everything is well combined and smooth.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined. Avoid overmixing.

          Spread in Pan: Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes or until the edges are lightly golden and a toothpick inserted into the center comes out clean.

            Make Salted Caramel: While the bars are baking, prepare the salted caramel. In a medium saucepan over medium heat, melt the granulated sugar. Stir constantly using a wooden spoon or heat-resistant spatula until melted and golden in color (about 5-7 minutes).

              Add Butter & Cream: Once the sugar reaches a deep amber color, carefully add the butter and heavy cream. The mixture will bubble vigorously, so be careful! Stir until smooth.

                Season with Salt: Remove the caramel from heat and stir in the sea salt and vanilla extract. Allow it to cool slightly.

                  Top the Bars: Once the butter bars are out of the oven and cooled for about 10 minutes, pour the salted caramel mixture over the top, spreading it evenly.

                    Cool & Serve: Let the bars sit at room temperature until the caramel sets (about 30 minutes). Before serving, sprinkle a pinch of flaky sea salt over the caramel for garnish. Cut into squares and enjoy!
