Ingredients

For the Cookie Base:

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, at room temperature

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

2 teaspoons vanilla extract

For the Caramel Layer:

1 cup soft caramel candies (or homemade caramel)

1/4 cup heavy cream

Sea salt flakes, for sprinkling

For the Chocolate Topping:

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil (optional, for shine)

Additional sea salt flakes, for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

Make the Cookie Base: In a medium bowl, whisk together the flour, baking soda, and salt. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.

Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be thick.

Bake the Cookie Base: Spread the cookie dough evenly in the prepared baking pan. Bake for 12-15 minutes, or until the edges begin to lightly brown. The center may look slightly underbaked, but it will firm up as it cools.

Prepare the Caramel Layer: While the cookie base is baking, combine the caramel candies and heavy cream in a small saucepan over low heat. Stir constantly until the caramel is melted and smooth.

Assemble the Bars: Once the cookie base is out of the oven, immediately pour the melted caramel over the hot cookie layer. Use a spatula to spread it evenly. Sprinkle a light layer of sea salt flakes over the caramel.

Make the Chocolate Topping: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

Finish the Bars: Pour the melted chocolate over the caramel layer and spread it evenly. Sprinkle with additional sea salt flakes for a gourmet touch.

Chill and Cut: Allow the bars to cool completely at room temperature, then place them in the refrigerator for about 1 hour to set. Once set, lift the bars out of the pan using the parchment paper (if lined) and cut into squares.

Serve and Enjoy: Enjoy your delicious Salted Caramel Chocolate Sugar Cookie Bars as a sweet treat for any occasion!
