Santa Fe Chicken Foil Packets

2 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 small red onion, diced

1 can (15 oz) black beans, rinsed and drained

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). If using a grill, preheat to medium-high heat.

    Prepare Chicken: In a large bowl, season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Drizzle with a bit of olive oil and toss to coat evenly.

      Prepare Veggies: Add the cherry tomatoes, corn, red bell pepper, green bell pepper, red onion, and black beans to the bowl with the chicken. Mix gently to combine.

        Create Foil Packets: Cut four large pieces of aluminum foil (about 12x12 inches each). Place a piece of chicken in the center of each foil square, then evenly distribute the vegetable mix on top of each portion.

          Seal the Packets: Drizzle each foil packet with a little more olive oil and a sprinkle of salt and pepper. Fold the edges of the foil over to create a tight seal, making sure there are no openings for steam to escape.

            Cook the Packets: Place the foil packets on a baking sheet if cooking in the oven, or directly on the grill. Cook for about 25-30 minutes, or until the chicken is fully cooked and no longer pink in the center (internal temperature should reach 165°F/74°C).

              Add Cheese: Carefully open the packets (watch out for steam!), and sprinkle shredded cheese over the chicken and vegetables. Reseal the packets and cook for an additional 5-7 minutes until the cheese is melted and bubbly.

                Serve: Carefully open the packets and garnish with fresh chopped cilantro. Serve the Santa Fe chicken foil packets hot, straight from the foil, or transferred to a plate for a beautiful presentation.
