Sausage Green Bean Potato Casserole

1 pound Italian sausage (sweet or spicy, your choice)

4 medium potatoes, peeled and diced

2 cups fresh green beans, trimmed and cut into 2-inch pieces

1 medium onion, diced

3 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup milk

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Optional: 1/2 cup sour cream for added creaminess

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess grease and remove the sausage from the skillet; set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté until the onions are translucent, about 3-4 minutes. Add the green beans and diced potatoes, cooking for another 5 minutes, stirring occasionally.

        Mix Ingredients: In a large mixing bowl, combine the cooked sausage with the sautéed vegetable mixture. Stir in the milk, thyme, paprika, salt, and pepper. If using sour cream, mix it in as well for extra creaminess.

          Layer the Casserole: Transfer the sausage and vegetable mixture into a greased 9x13 inch baking dish. Spread it out evenly and then sprinkle the shredded cheddar cheese on top.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
