1 pound Italian sausage (spicy or mild, based on preference)

4 medium potatoes, diced (Yukon Gold or Russet)

1 small head of green cabbage, chopped

1 large onion, diced

2 cloves garlic, minced

4 cups low-sodium chicken or vegetable broth

1 cup carrots, sliced

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon black pepper

Salt to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it up into smaller pieces with a wooden spoon, about 5-7 minutes. Once cooked, remove the sausage and set aside, leaving the fat in the pot.

    In the same pot, add the diced onion and sliced carrots. Sauté for about 5 minutes or until the onion becomes translucent.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the diced potatoes, chopped cabbage, chicken broth, thyme, smoked paprika, black pepper, and salt. Stir well to combine.

          Bring the soup to a boil, then reduce the heat to low and cover. Let it simmer for about 20 minutes or until the potatoes and cabbage are tender.

            Return the browned sausage to the pot, stir to combine, and let everything heat through for another 5 minutes.

              Taste the soup and adjust seasoning with more salt and pepper if needed.

                Serve hot, garnished with fresh parsley for a touch of color and flavor!
