Ingredients

1 lb ground turkey (lean)

4 cups green cabbage, shredded

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

2 tablespoons olive oil

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon black pepper

Salt to taste

1/4 cup fresh parsley, chopped (for garnish)

Optional: red pepper flakes for heat

Instructions

Prep the Ingredients: Wash and shred the cabbage, dice the onion and red bell pepper, and mince the garlic. This will keep your cooking process smooth!

Cook the Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey, breaking it up as it cooks. Season with salt, black pepper, smoked paprika, and cumin. Cook until browned and cooked through, about 5-7 minutes. Remove the turkey from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and red bell pepper. Sauté for about 3-4 minutes until they start to soften. Then add the minced garlic and cook for an additional minute until fragrant.

Add the Cabbage: Stir in the shredded cabbage and soy sauce. Cook for 5-7 minutes, stirring occasionally, until the cabbage is tender and slightly caramelized.

Combine Everything: Return the cooked turkey to the skillet, mixing it with the sautéed vegetables. Cook together for an additional 2-3 minutes to heat everything through. Taste and adjust seasoning, adding red pepper flakes for a spicy kick if desired.

Garnish and Serve: Remove the skillet from heat, sprinkle the fresh parsley on top, and serve hot. This dish pairs well with crusty bread or over rice for a complete meal!
