Savory Beef and Vegetable Quesadillas for Families

1 lb ground beef

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 cup corn kernels (fresh or frozen)

1 tsp ground cumin

1 tsp chili powder

1/2 tsp paprika

Salt and pepper, to taste

2 cups shredded cheddar cheese

4 large flour tortillas

2 tbsp olive oil

Optional toppings: sour cream, guacamole, salsa, and chopped cilantro

Instructions
 

Cook the Beef: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain any excess fat.

    Add Vegetables: To the same skillet, add the diced onion, garlic, and bell peppers. Sauté for about 5-7 minutes until the veggies are softened. Add in the corn and mix well.

      Season the Mixture: Stir in the cumin, chili powder, paprika, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld together. Remove from heat.

        Assemble Quesadillas: Lay one flour tortilla on a clean surface. On one half of the tortilla, evenly spread a quarter of the beef and vegetable mixture. Top with a generous amount of shredded cheddar cheese, and fold the tortilla over to create a half-moon shape.

          Cook Quesadillas: In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Carefully place a quesadilla in the skillet. Cook for about 3-4 minutes on one side or until golden and crispy. Carefully flip and cook the other side for another 3-4 minutes. Repeat for the remaining tortillas.
