Savory Beef and Vegetable Stir-Fry in 30 Minutes

1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets

1 cup bell peppers (red, yellow, or green), sliced

1 cup sugar snap peas or snow peas

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

4 tablespoons low-sodium soy sauce

2 tablespoons oyster sauce (optional)

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 tablespoon sesame oil

1 teaspoon red chili flakes (optional)

Salt and pepper to taste

Cooked rice or noodles for serving

Sesame seeds and chopped green onions for garnish

Prep the Ingredients: Before cooking, ensure all vegetables are washed and cut accordingly. Slice the beef into thin strips and marinate briefly in 2 tablespoons of soy sauce, cornstarch, and a pinch of black pepper for about 10 minutes.

    Heat Up the Wok: In a large wok or skillet, heat 2 tablespoons of vegetable oil over high heat until shimmering.

      Cook the Beef: Add the marinated beef to the wok in a single layer. Stir-fry for about 2-3 minutes until browned and nearly cooked through. Remove the beef from the wok and set aside.

        Stir-Fry the Veggies: In the same wok, add a bit more oil if needed. Toss in the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant. Then, add broccoli, bell peppers, and sugar snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

          Combine: Return the beef to the wok with the vegetables. Pour in the remaining 2 tablespoons of soy sauce, oyster sauce (if using), and sesame oil. Toss everything together and allow to cook for another 2 minutes. If the mixture seems too dry, add a splash of water.

            Thicken the Sauce: Stir in the cornstarch slurry and cook for an additional minute, ensuring everything is coated and the sauce thickens. Adjust the seasoning with salt, pepper, and red chili flakes if desired.

              Serve: Remove from heat and garnish with sesame seeds and chopped green onions. Serve hot over cooked rice or noodles.
