Ingredients

For the Waffles:

1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

1 cup buttermilk

2 large eggs

4 tablespoons unsalted butter, melted

1 cup shredded sharp cheddar cheese

½ cup fresh chives, chopped

For the Sandwich Filling:

6 slices deli turkey or ham

1 ripe avocado, sliced

1 cup baby spinach

4 tablespoons cream cheese (plain or herbed)

A pinch of salt and pepper

Instructions

Preheat the Waffle Iron: Turn on your waffle iron to preheat according to the manufacturer's instructions.

    Make the Waffle Batter:

      - In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

        - In another bowl, combine buttermilk, eggs, and melted butter. Whisk until well mixed.

          - Pour the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix.

            - Fold in the shredded cheddar cheese and chopped chives until evenly distributed.

              Cook the Waffles:

                - Pour an appropriate amount of batter into the preheated waffle iron (usually about ½ to ¾ cup, depending on your iron).

                  - Cook according to your waffle iron's instructions, typically until the waffles are golden brown and crispy. Repeat with the remaining batter.

                    Prepare the Sandwich Filling:

                      - While the waffles are cooking, prepare the filling. Spread a tablespoon of cream cheese on one side of each waffle.

                        - Layer the filling on half of the waffles: add a slice of turkey or ham, followed by a few avocado slices, and a handful of spinach. Sprinkle with salt and pepper to taste.

                          Assemble the Sandwiches:

                            - Top each filled waffle with another waffle, cream cheese side down, pressing gently together to create a sandwich.

                              Serve:

                                - Cut the waffle sandwiches in half or quarters for easier eating. Serve warm, and enjoy the delightful combination of savory flavors!
