Savory Cheesy Broccoli and Rice Casserole

2 cups cooked brown rice

4 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 (10.5 oz) can cream of mushroom soup (or homemade)

1 cup vegetable broth (or chicken broth)

1 teaspoon Dijon mustard

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

½ cup breadcrumbs (optional, for topping)

2 tablespoons olive oil or melted butter (optional, for breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, blanch the florets in boiling water for 2-3 minutes until bright green. Immediately transfer to ice water to stop cooking. If using frozen, allow to thaw and drain well.

      Sauté Aromatics: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 4-5 minutes until translucent. Add minced garlic and sauté for another 1-2 minutes until fragrant.

        Mix the Base: In a large mixing bowl, combine the cooked brown rice, sautéed onion and garlic, blanched (or thawed) broccoli, shredded cheddar, shredded mozzarella, cream of mushroom soup, vegetable broth, Dijon mustard, garlic powder, onion powder, black pepper, and salt. Stir until everything is evenly coated and well mixed.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Add Topping (Optional): If you like a crunchy topping, combine breadcrumbs with 1 tablespoon of olive oil or melted butter in a small bowl until coated. Sprinkle the breadcrumbs evenly over the casserole for added texture.

              Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.

                Cool and Serve: Allow the casserole to cool for 5-10 minutes before serving. This will help it set a bit more for easier slicing.
