1 cup quinoa, rinsed and drained

2 cups vegetable broth

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup panko breadcrumbs (optional, for topping)

1 tablespoon olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9 inch baking dish with olive oil.

    Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool slightly.

      Prepare the Mixture: In a large mixing bowl, combine the cooked quinoa, chopped spinach, ricotta cheese, half of the mozzarella, half of the Parmesan, eggs, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are thoroughly combined.

        Transfer to Baking Dish: Pour the quinoa and spinach mixture into the prepared baking dish, spreading it evenly.

          Add Cheese Topping: Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top. If using breadcrumbs, sprinkle them on top for added crunch.

            Bake the Casserole: Place the baking dish in the preheated oven and bake for 25-30 minutes or until the top is golden and bubbly.

              Cool and Serve: Remove from the oven and let it sit for about 5 minutes before serving. This casserole can be enjoyed warm or at room temperature!
