Savory Ground Beef and Potato Pie

1 lb (450g) ground beef

2 large russet potatoes, peeled and diced

1 onion, finely chopped

2 cloves garlic, minced

1 cup frozen peas and carrots mix

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

1 cup beef broth

1 tablespoon flour (optional for thickening)

1 sheet of pie crust (store-bought or homemade)

1 egg, beaten (for egg wash)

Instructions
 

Cook the Potatoes: In a large pot of salted boiling water, cook the diced potatoes until tender, about 15 minutes. Drain and set aside.

    Prepare the Filling: In a large skillet over medium heat, add the olive oil. Sauté the chopped onion and minced garlic for about 3-4 minutes until the onion becomes translucent.

      Brown the Beef: Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes, and drain any excess fat.

        Combine Ingredients: Season the beef mixture with Worcestershire sauce, thyme, paprika, salt, and pepper. Stir in the peas and carrots, and cook for another 2 minutes.

          Thicken the Mixture: If your beef mixture is too loose, sprinkle with flour and stir well to incorporate. Gradually add the beef broth, stirring until the mixture thickens slightly. Remove from heat and let cool briefly.

            Assemble the Pie: Preheat your oven to 400°F (200°C). Roll out the pie crust and place half of it in a pie dish. Fill it with the beef and vegetable mixture. Top it with the cooked potatoes, spreading them out evenly.

              Cover and Seal: Roll out the second half of the pie crust and place it over the filling. Seal the edges by pinching them together and cut small slits on top of the crust for steam to escape. Brush the top with the beaten egg for a golden finish.

                Bake: Place the pie in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and flaky.
