Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 cup shredded sharp cheddar cheese

1/2 cup cold unsalted butter, cubed

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional)

1 egg (for egg wash, optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, garlic powder, thyme, and rosemary until well combined.

Incorporate Butter: Add the cubed cold butter into the flour mixture. Use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs with pea-sized bits of butter still visible.

Add Cheddar: Stir in the shredded cheddar cheese and chopped chives (if using) until evenly distributed throughout the mixture.

Add Buttermilk: Pour in the buttermilk and gently fold the mixture together with a spatula or wooden spoon until just combined. Avoid overmixing; the dough should be slightly crumbly but hold together.

Shape the Dough: Turn the dough out onto a floured surface and gently knead it a few times until it comes together in a ball. Pat the dough into a 1-inch thick rectangle.

Cut the Scones: Use a sharp knife or pizza cutter to cut the rectangle into squares or triangles. Place the scones on the prepared baking sheet, spaced apart.

Egg Wash (Optional): If desired, whisk the egg in a small bowl and brush it over the tops of each scone for a golden finish.

Bake: Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Let the scones cool on the baking sheet for a few minutes before transferring them to a wire rack. Serve warm or at room temperature, and enjoy!
