1 cup uncooked brown rice

2 cups vegetable broth

2 cups fresh broccoli florets (or frozen)

1 cup shredded sharp cheddar cheese

1/2 cup Parmesan cheese, grated

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon black pepper

1 tablespoon olive oil

Salt, to taste

Optional: 1/2 cup plain Greek yogurt or sour cream for creaminess

Instructions
 

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Rice: Add the uncooked brown rice to the pot and stir well to coat it with the oil and aromatics. Pour in the vegetable broth and add the thyme, paprika, black pepper, and salt. Bring this mixture to a boil.

      Add Broccoli: Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the rice is tender and has absorbed most of the liquid. Stir in the broccoli florets, cover, and cook for another 5-7 minutes until the broccoli is bright green and tender.

        Incorporate Cheese: Remove the pot from heat. If you’re using Greek yogurt or sour cream, stir it in now for extra creaminess. Then, fold in the sharp cheddar cheese and Parmesan cheese, allowing the residual heat to melt the cheese thoroughly. Adjust the salt and pepper if necessary.

          Serve: Carefully fluff the casserole with a fork and serve hot, garnishing with additional cheese or fresh herbs if desired!
