1 lb (450g) pork tenderloin, thinly sliced

4 cups green cabbage, shredded

1 medium onion, sliced

2 cloves garlic, minced

1-inch piece of ginger, minced

1 large carrot, julienned

1/4 cup soy sauce (low sodium)

2 tablespoons oyster sauce

1 tablespoon rice vinegar

2 teaspoons sesame oil

2 tablespoons vegetable oil (for stir-frying)

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional for heat)

3 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Pork: In a medium bowl, combine the sliced pork tenderloin with soy sauce, oyster sauce, rice vinegar, sesame oil, and a pinch of black pepper. Let it marinate for at least 15 minutes to enhance the flavors.

    Prepare the Veggies: While the pork is marinating, prepare the vegetables. Shred the cabbage, slice the onion, julienne the carrot, and mince the garlic and ginger. Set aside.

      Heat the Skillet: In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the marinated pork in a single layer. Stir-fry for about 4-5 minutes or until the pork is browned and cooked through. Remove the pork from the skillet and set aside.

        Sauté the Aromatics: In the same skillet, add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.

          Add the Vegetables: Next, add the sliced onion and julienned carrots to the skillet. Stir-fry for 2-3 minutes until they start to soften. Then, add the shredded cabbage and continue to stir-fry for another 2-4 minutes, or until the cabbage is wilted and tender.

            Combine Ingredients: Return the cooked pork to the skillet. If using, sprinkle in the red pepper flakes for heat. Stir everything together to combine and heat through for about 1-2 minutes. Taste and adjust seasoning with additional salt or pepper if needed.

              Garnish and Serve: Remove the stir-fry from the heat. Serve hot, garnished with sliced green onions and a sprinkle of sesame seeds on top.
