2 medium sweet potatoes, peeled and diced

1 lb ground turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup spinach leaves, roughly chopped

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

½ cup chicken broth

Fresh cilantro or parsley for garnish (optional)

Heat the Skillet: In a large skillet, heat the olive oil over medium heat.

    Sauté the Aromatics: Add the chopped onion and garlic to the skillet. Sauté for about 2-3 minutes, until the onion becomes translucent.
