4 large bell peppers (any color)

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 small onion, diced

3 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and black pepper to taste

1 cup shredded mozzarella cheese

2 tbsp olive oil

Fresh basil or parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them upright in a baking dish.

      Cook the Filling: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the diced onion and garlic. Sauté until the onion becomes translucent, about 3-5 minutes.

        Add the Turkey: Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned, about 6-8 minutes, ensuring it's fully cooked through.

          Incorporate the Vegetables: Stir in the chopped spinach and diced tomatoes, cooking until the spinach wilts. Season with Italian seasoning, red pepper flakes, salt, and black pepper.

            Combine Quinoa/Rice: Remove the skillet from heat and fold in the cooked quinoa (or rice) until all ingredients are well mixed.

              Stuff the Peppers: Spoon the turkey and spinach mixture into each prepared bell pepper until they are generously filled.

                Top with Cheese: Sprinkle shredded mozzarella generously over the tops of each stuffed pepper.

                  Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                    Garnish & Serve: Once cooked, remove from the oven and let cool for a few minutes. Garnish with fresh basil or parsley before serving. Enjoy your delicious savory stuffed peppers!
