Savory Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional for some heat)

1 cup shredded mozzarella cheese (half for mixing and half for topping)

1/2 cup tomato sauce (plus extra for drizzling)

Salt and pepper, to taste

Olive oil for sautéing

Fresh basil or parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outsides with olive oil and place them upright in a baking dish.

      Cook the Turkey Mixture: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).

        Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until it’s browned and cooked through (around 5-7 minutes).

          Add Spinach and Seasonings: Mix in the chopped spinach, cooked quinoa, Italian seasoning, crushed red pepper flakes, salt, and pepper. Stir until the spinach wilts down.

            Incorporate Cheese and Tomato Sauce: Remove the skillet from heat and stir in half of the shredded mozzarella cheese and the 1/2 cup of tomato sauce. Mix well until everything is combined.

              Stuff the Peppers: Generously spoon the turkey-spinach mixture into each bell pepper, packing it in slightly.

                Top with Cheese: Sprinkle the remaining mozzarella cheese on top of each stuffed pepper. Drizzle a little extra tomato sauce over the top for added flavor.

                  Bake: Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                    Garnish and Serve: Once done, remove from the oven and let them cool for a few minutes. Garnish with fresh basil or parsley before serving.
