1 lb ground turkey

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup fresh spinach, chopped

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup chicken or vegetable broth

1/4 cup fresh parsley, chopped (for garnish)

Optional: 1/3 cup feta cheese, crumbled

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and a pinch of salt. Sauté for about 10-12 minutes or until they are tender and slightly caramelized, stirring occasionally. Remove sweet potatoes from the skillet and set aside.

    Cook the Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and bell pepper, cooking for about 5 minutes until they start to soften. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Add Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook for about 6-8 minutes, breaking it apart with a spatula until no longer pink.

        Spice It Up: Stir in the smoked paprika, cumin, chili powder, and season with salt and pepper to taste. Mix well to combine all the spices and cook for an additional 2 minutes.

          Combine Ingredients: Return the sweet potatoes to the skillet. Pour in the broth and stir everything together. Allow it to cook for 3-4 minutes, gently mixing so everything is well combined and the flavors meld.

            Add Spinach: Stir in the chopped spinach and cook until wilted, about 2 minutes.

              Serve: Remove from heat, garnish with fresh parsley and optional feta cheese if desired. Serve warm and enjoy!
