2 cups cooked jasmine rice (preferably day-old)

3 large eggs

1 cup mixed vegetables (carrots, peas, bell peppers, and corn)

3 tablespoons vegetable oil

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

3 green onions, finely chopped

2 cloves garlic, minced

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Prepare the Ingredients: Start by ensuring your jasmine rice is cooked and has cooled down. This will help prevent clumping during frying. If using fresh vegetables, chop them into small uniform pieces.

    Scramble the Eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Pour in the eggs and stir gently until just set but still slightly creamy. Remove them from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining 2 tablespoons of vegetable oil. Once hot, add minced garlic and stir for about 30 seconds, until fragrant. Then add the mixed vegetables and stir-fry for about 3-5 minutes until they are tender and vibrant in color.

        Add the Rice: Once the vegetables are cooked, increase the heat to high. Add the day-old rice to the skillet, breaking up any clumps. Stir-fry for about 4-5 minutes until the rice is heated through and slightly crispy.

          Season the Rice: Pour in the soy sauce, oyster sauce (if using), and sesame oil, stirring well to combine. Taste and adjust seasoning with salt and pepper as needed.

            Combine with Eggs: Fold the scrambled eggs back into the rice along with the chopped green onions, mixing everything evenly until well incorporated and heated through.
