Savory Vegetable Stir-Fry with Quinoa

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

2 tablespoons olive oil

1 medium onion, thinly sliced

3 cloves garlic, minced

1 cup bell peppers (red, yellow, green), sliced

1 cup broccoli florets

1 carrot, julienned

1 zucchini, sliced

1 cup snap peas

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 teaspoon fresh ginger, minced

1 tablespoon rice vinegar

Salt and pepper to taste

Optional toppings: sesame seeds, chopped green onions, or crushed red pepper flakes

Instructions
 

Cook the Quinoa: In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Vegetables: While the quinoa cooks, wash and chop all vegetables into desired sizes. This can be done while quinoa is simmering to save time.

      Start Stir-Frying: In a large skillet or wok, heat olive oil over medium-high heat. Add the sliced onion and sauté for about 2-3 minutes until slightly softened and translucent.

        Add Garlic and Veggies: Stir in minced garlic and fresh ginger, cooking for an additional 1 minute until aromatic. Then, add the bell peppers, broccoli, carrot, zucchini, and snap peas to the skillet. Stir-fry all the vegetables for about 5-7 minutes or until they are tender yet still crisp.

          Season the Stir-Fry: Pour in the soy sauce, sesame oil, and rice vinegar. Toss everything together, ensuring all the vegetables are coated evenly. Continue to cook for another 2-3 minutes to allow the flavors to meld. Season with salt and pepper to taste.

            Combine with Quinoa: Add the cooked quinoa to the skillet, gently folding it in with the vegetables until well mixed. Heat through for another minute.

              Serve & Garnish: Remove from heat, and serve hot. Garnish with optional toppings like sesame seeds, chopped green onions, or red pepper flakes for an extra kick.
