1 lb boneless, skinless chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup bell peppers, sliced (any color)

1 cup broccoli florets

1 cup cherry tomatoes, halved

1/2 cup corn (fresh or frozen)

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon balsamic vinegar

1/4 cup shredded cheese (cheddar or mozzarella, optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: In a bowl, combine the chicken pieces with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss well to evenly coat the chicken with the seasoning.

    Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is browned and thoroughly cooked. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the sliced bell peppers and broccoli florets. Sauté for about 3-4 minutes, until they start to soften. Add the cherry tomatoes and corn, cooking for an additional 2-3 minutes until heated through and vibrant.

        Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Pour in the soy sauce and balsamic vinegar, stirring everything together. Cook for another 2 minutes to allow the flavors to meld.
