Ingredients
  

1 lb mixed seafood (shrimp, scallops, and crab meat)

4 cups seafood stock

1 cup dry white wine

1 onion, diced

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 cup heavy cream

3 tablespoons tomato paste

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, for garnish

Lemon wedges, for serving

Sauté the Vegetables: In a large pot, heat the olive oil and butter over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Deglaze: Pour in the white wine, scraping the bottom of the pot to deglaze. Allow the wine to simmer for about 5 minutes until reduced by half.

      Add the Seafood Stock & Tomato Paste: Stir in the seafood stock and tomato paste, incorporating everything well. Bring the mixture to a gentle simmer.

        Season the Soup: Add dried thyme, paprika, salt, and pepper. Let the bisque simmer for about 15 minutes to meld the flavors.

          Incorporate Seafood: Add the mixed seafood to the pot and cook for an additional 5-7 minutes, or until the seafood is cooked through and tender.

            Blend for Creaminess: For a smooth texture, use an immersion blender to purée the bisque to your desired consistency. If you prefer a chunkier bisque, blend only half of it and leave the rest as is.

              Finish with Cream: Lower the heat and stir in the heavy cream. Allow the bisque to warm through for about 3-4 minutes without boiling.

                Serve: Ladle the bisque into bowls, garnishing with fresh parsley and a lemon wedge. Enjoy with crusty bread on the side for a complete meal.
