Sheet Pan Garlic Butter Salmon

Ingredients
  

4 salmon fillets (about 6 oz each)

1 cup asparagus, trimmed

1 cup cherry tomatoes, halved

1 medium red onion, sliced

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped (plus more for garnish)

1 lemon, sliced into rounds

1 teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon olive oil

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easier cleanup.

    Prepare the Butter Mixture: In a small bowl, combine melted butter, minced garlic, chopped parsley, smoked paprika, salt, and pepper. Mix well until all the ingredients are thoroughly combined.

      Season the Salmon: Place the salmon fillets in the center of the lined baking sheet. Brush the garlic butter mixture generously over each fillet. Be sure to reserve some of the mixture for the vegetables.

        Prepare the Vegetables: In a large bowl, toss the asparagus, cherry tomatoes, and sliced red onion with olive oil, salt, pepper, and some of the remaining garlic butter mixture until well coated.

          Arrange on the Baking Sheet: Arrange the seasoned vegetables around the salmon fillets on the baking sheet. Place lemon slices on top of the salmon and any remaining lemon slices on the vegetables.

            Bake: Place the baking sheet in the oven and bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork. The vegetables should be tender but still vibrant in color.

              Garnish and Serve: Once cooked, remove from the oven and let it rest for a couple of minutes. Garnish with additional parsley and serve with fresh lemon wedges on the side.
