4 tilapia fillets

2 tablespoons olive oil

1 tablespoon fresh lemon juice

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 bell pepper (any color), sliced

1 zucchini, sliced

1 red onion, sliced

Fresh parsley, for garnishing

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
