1 cup stone-ground grits

4 cups water or low-sodium chicken broth

1 cup shredded sharp cheddar cheese

1 lb large shrimp (peeled and deveined)

4 slices of bacon (chopped)

1 medium onion (diced)

2 cloves garlic (minced)

1 cup heavy cream

2 tablespoons butter

1 tablespoon lemon juice

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions (sliced, for garnish)

Cook the Grits: In a large saucepan, bring 4 cups of water or chicken broth to a boil. Slowly whisk in the stone-ground grits. Reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes or until thickened. Add salt to taste.

    Add Cheese: Once the grits are fully cooked, stir in the shredded cheddar cheese and butter until well melted and creamy. Keep warm on low heat.

      Prepare the Shrimp: In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to remove the bacon and drain on paper towels, leaving the drippings in the skillet.

        Sauté the Aromatics: To the bacon drippings, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.

          Cook the Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Sprinkle with smoked paprika, salt, and pepper. Cook the shrimp for about 3-4 minutes until they turn pink and opaque.

            Make the Sauce: Lower the heat and stir in the heavy cream and lemon juice. Let it simmer for a few minutes to thicken slightly. Return the cooked bacon to the skillet and mix everything well.

              Serve: Spoon the creamy grits onto plates and top generously with the shrimp mixture. Garnish with fresh sliced green onions.
