1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

For the Rice:

1 cup jasmine rice or sushi rice

2 cups water

Pinch of salt

For the Spicy Mayo:

½ cup mayonnaise

1 tablespoon sriracha (adjust according to spice preference)

1 teaspoon lime juice

1 teaspoon soy sauce

Optional Toppings:

Sliced avocado

Chopped green onions

Seaweed sheets, cut into strips

Pickled ginger

Sesame seeds

Cook the Rice: Rinse the jasmine or sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rice, water, and a pinch of salt. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.

    Prepare the Shrimp: In a large bowl, combine the shrimp, olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Toss well to ensure all the shrimp are coated evenly.
