Shrimp Skewers with Pineapple Salsa

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon lime zest

Salt and pepper to taste

8-10 skewers (if using wooden skewers, soak them in water for 30 minutes)

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Marinate the Shrimp: In a large bowl, combine the olive oil, minced garlic, smoked paprika, ground cumin, lime zest, salt, and pepper. Add the shrimp to the marinade and toss to coat evenly. Cover and let it marinate in the refrigerator for at least 20 minutes.

    Prepare the Pineapple Salsa: In a medium bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, and cilantro. Squeeze the lime juice over the mixture and season with salt. Mix well and set aside to allow the flavors to meld.
