Shrimp Tomato Spinach Pasta in Garlic Butter Sauce

8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

2 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1/2 cup unsalted butter (1 stick)

1/2 tsp red pepper flakes (optional)

Salt and freshly cracked black pepper to taste

1/4 cup freshly grated Parmesan cheese

Fresh basil leaves for garnish

Juice of 1 lemon

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Drain and reserve about 1 cup of pasta water.

    Prepare the Shrimp: In a large skillet over medium-high heat, melt 1/4 cup of the butter. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant.

      Cook the Shrimp: Add the shrimp to the skillet in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, add the remaining 1/4 cup of butter, halved cherry tomatoes, and chopped spinach. Sauté until the spinach is wilted and the tomatoes are softened, about 3-4 minutes.

          Combine Ingredients: Return the cooked shrimp to the skillet. Pour in the cooked pasta, along with the reserved pasta water (start with 1/2 cup and add more if needed). Toss to combine everything well.
