Ingredients

8 ounces elbow macaroni

6 slices of thick-cut bacon, chopped

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional for heat)

Salt and black pepper to taste

3 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko recommended)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy and golden brown. Remove the bacon and drain on paper towels, leaving about 1 tablespoon of bacon fat in the skillet.

Make the Roux: In the same skillet with the bacon fat, add the butter and melt over medium heat. Whisk in the flour and cook for about 1 minute until bubbly and lightly golden.

Create the Cheese Sauce: Gradually whisk in the whole milk, ensuring there are no lumps. Continue to whisk while bringing the mixture to a simmer; it will thicken. Stir in the garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper.

Add the Cheese: Reduce the heat to low and mix in the cheddar, Gruyère, and Parmesan until melted and smooth, creating a luscious cheese sauce.

Combine Macaroni and Sauce: Fold the cooked macaroni and crispy bacon into the cheese sauce. Ensure every piece of macaroni is covered in that silky cheese mixture.

Prepare to Bake: Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased 9x13 inch baking dish.

Top with Breadcrumbs: In a small bowl, mix the breadcrumbs with olive oil. Evenly sprinkle the breadcrumb mixture over the top of the macaroni and cheese.

Bake: Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.

Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with chopped fresh parsley for a burst of color. Serve hot and enjoy your creamy, dreamy mac & cheese with bacon!
