1 lb chicken breast, diced

1 cup long-grain white rice

6 cups low-sodium chicken broth

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

2 tablespoons olive oil

Juice of 1 lemon (optional, for added brightness)

Fresh parsley for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables start to soften. Add minced garlic and continue to sauté for an additional 1-2 minutes until fragrant.

    Cook Chicken: Add the diced chicken breast to the pot. Season with salt, pepper, dried thyme, and dried parsley. Cook the chicken for about 5-6 minutes until it’s just cooked through, stirring occasionally.

      Add Broth and Rice: Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the rice and lower the heat to a simmer. Cover the pot and let it cook for about 15-20 minutes, or until the rice is tender.
