2 pounds fresh figs, stems removed and chopped

1 cup granulated sugar

1/4 cup freshly squeezed lemon juice

1 tablespoon lemon zest

1/2 teaspoon vanilla extract (optional)

1/4 teaspoon ground cinnamon (optional)

1/4 teaspoon salt

Prepare the Figs: Rinse the fresh figs under cold water and remove the stems. Chop the figs into small pieces. If you prefer a smoother texture, you can pulse them in a food processor for a few seconds.

    Combine Ingredients: In a large, heavy-bottomed pot, combine the chopped figs, sugar, lemon juice, lemon zest, salt, and the optional vanilla extract and cinnamon. Stir to combine.

      Cook the Mixture: Place the pot over medium heat. Bring the mixture to a gentle simmer, stirring occasionally to avoid sticking. As the figs cook, they will release their juices.

        Mash to Desired Consistency: Once the figs have softened (after about 10 minutes of simmering), use a potato masher or the back of a spoon to mash them to your desired consistency—leave some chunks for texture or mash fully for a smooth jam.

          Cook Down: Continue to simmer the mixture for about 30-40 minutes, stirring frequently. You want the jam to thicken up; it should coat the back of a spoon. To test for doneness, drop a spoonful onto a plate and let it cool. If it holds its shape, it’s ready!

            Jar the Jam: Remove the pot from heat and let the jam cool for about 10 minutes. Pour the warm jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Seal the jars with lids.

              Storage: Allow the jam to cool to room temperature before refrigerating. The fig jam can be stored in the refrigerator for up to 3 weeks or processed in a water bath canner for long-term storage.
