Ingredients

4 cups seedless watermelon, cubed

1 large cucumber, diced

1 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Optional: 1/4 red onion, thinly sliced

Instructions

Prepare the Ingredients: Start by washing the watermelon, cucumber, and mint leaves. Cut the watermelon into bite-sized cubes and the cucumber into small diced pieces. If using, thinly slice the red onion.

Mix the Base: In a large mixing bowl, combine the cubed watermelon and diced cucumber. If you're adding red onion, toss it in now for extra flavor.

Add Feta and Mint: Gently fold in the crumbled feta cheese and chopped mint leaves. Be careful not to break the feta too much – you want lovely, chunky pieces in your salad.

Dress the Salad: In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Adjust the seasoning according to your preference.

Combine Everything: Drizzle the dressing over the salad mixture. Using a spatula, gently toss everything together until well combined and coated in the dressing.

Chill and Serve: Let the salad rest in the fridge for about 10–15 minutes to allow the flavors to meld. Serve chilled as a refreshing side dish or light lunch!
