Sizzling Shrimp Tacos with Cilantro Lime Slaw

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and black pepper to taste

Juice of 1 lime

For the Cilantro Lime Slaw:

3 cups shredded green cabbage

1 cup shredded carrots

1/2 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

1 tablespoon honey (or agave syrup for a vegan option)

Salt and pepper to taste

For Assembly:

8 small corn or flour tortillas

Optional toppings: sliced avocado, diced red onion, sliced jalapeños, and extra lime wedges

Instructions
 

Prep the Shrimp: In a medium bowl, combine the peeled and deveined shrimp with olive oil, chili powder, cumin, garlic powder, paprika, salt, black pepper, and lime juice. Toss to coat evenly. Let it marinate for about 10-15 minutes while you prepare the slaw.

    Make the Cilantro Lime Slaw: In a large bowl, combine the shredded cabbage and carrots. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper. Pour this dressing over the cabbage mixture and toss until well combined. Gently stir in the chopped cilantro. Set aside.

      Cook the Shrimp: Heat a non-stick skillet or grill pan over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque, and are cooked through. Remove from heat.
