Ingredients

2 ribeye steaks (1 inch thick)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

4 cloves garlic, crushed

2 sprigs fresh rosemary (or thyme)

Optional: Fresh parsley, chopped (for garnish)

Instructions

Preparation: Remove the steaks from the refrigerator about 30 minutes before cooking to allow them to reach room temperature. Pat them dry with paper towels and season both sides generously with salt and pepper.

Heat the Skillet: In a large cast-iron skillet, heat the olive oil over medium-high heat until it shimmers.

Sear the Steaks: Carefully place the steaks in the skillet and sear for about 4-5 minutes without moving them, until a golden-brown crust forms. Turn the steaks and sear for another 4-5 minutes for medium-rare, or cook to your desired doneness.

Add Garlic and Butter: Reduce the heat to medium-low. Add the butter, crushed garlic, and rosemary to the skillet. As the butter melts, tilt the skillet slightly and spoon the melted butter over the steaks repeatedly for about 2 minutes. This will enhance the flavor and create a rich garlic butter sauce.

Let Rest: Remove the steaks from the skillet and let them rest on a plate for 5 minutes. This allows the juices to redistribute.

Serve: Slice the steaks against the grain, drizzle with the garlic butter from the skillet, and garnish with fresh parsley if desired. Enjoy with your favorite side dishes!
