Searing your country-style BBQ ribs before slow cooking is a crucial step that elevates the overall flavor of the dish. This process creates a beautiful crust on the meat, thanks to the Maillard reaction, which occurs when proteins and sugars in the meat are exposed to high heat. This reaction not only enhances the flavor but also adds a depth of richness that makes the ribs more savory and appealing.

Ingredients

3-4 pounds country-style pork ribs

2 tablespoons olive oil

1 tablespoon salt

1 tablespoon black pepper

1 tablespoon smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cayenne pepper (optional, for heat)

1 cup barbecue sauce (your favorite brand or homemade)

1/2 cup apple cider vinegar

1/2 cup chicken broth

1 tablespoon brown sugar

2 tablespoons Worcestershire sauce

Instructions

Prepare the Ribs: Rinse the country-style pork ribs under cold water and pat them dry with paper towels. If there's a silver skin (a thin membrane) on the back of the ribs, carefully remove it with a sharp knife.

Make the Spice Rub: In a small bowl, mix together the salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper. Rub this mixture all over the ribs, ensuring they are evenly coated.

Sear the Ribs: In a large skillet, heat olive oil over medium-high heat. Once hot, add the ribs in batches if necessary, searing each side for about 3-4 minutes until browned. This will enhance the flavor of the meat.

Prepare the Slow Cooker: In a separate bowl, whisk together the barbecue sauce, apple cider vinegar, chicken broth, brown sugar, and Worcestershire sauce. Pour the mixture into the bottom of the slow cooker.

Slow Cook the Ribs: Place the seared ribs upright into the slow cooker, standing them on their bone sides if possible. This helps to maximize the flavor absorption. Pour any remaining sauce mixture over the ribs.

Cook: Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours. The ribs should be tender and easily fall off the bone when done.

Finish and Serve: Once cooked, carefully remove the ribs from the slow cooker. For added glaze, preheat your oven to broil. Place the ribs on a baking sheet lined with parchment paper and brush with extra barbecue sauce. Broil for 3-5 minutes until slightly caramelized; keep an eye on them to prevent burning.

Garnish: Allow ribs to rest for a few minutes before slicing. Serve hot, with additional barbecue sauce on the side and your choice of sides such as coleslaw or cornbread.
