Ingredients

4 bone-in pork chops (about 1 inch thick)

2 medium apples (like Honeycrisp or Fuji), cored and sliced

1 cup vegetable broth

1/2 cup pure maple syrup

1 tablespoon Dijon mustard

1 teaspoon ground cinnamon

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

1 tablespoon olive oil

Fresh thyme sprigs for garnish (optional)

Instructions

Sear the Pork Chops: In a large skillet, heat olive oil over medium-high heat. Season the pork chops with salt, pepper, garlic powder, and onion powder. Sear the chops for about 3-4 minutes on each side until they are golden brown. Remove from the skillet and set aside.

Prepare the Slow Cooker: In the same skillet, deglaze by adding a splash of vegetable broth, scraping up any flavorful bits stuck to the bottom. Pour the deglazed liquid into a slow cooker.

Mix the Sauce: In a bowl, whisk together the remaining vegetable broth, maple syrup, Dijon mustard, cinnamon, and a pinch of salt and pepper.

Layer Ingredients: Place the sliced apples at the bottom of the slow cooker. Arrange the seared pork chops on top of the apples. Pour the maple glaze evenly over the chops and apples.

Slow Cook: Cover the slow cooker and cook on low for 6-7 hours or high for 4 hours until the pork chops are tender and the flavors meld together.

Serve: Once done, carefully remove the pork chops and apples from the slow cooker. Give the sauce a gentle stir and then drizzle it over the chops. Garnish with fresh thyme sprigs if desired.

Enjoy: Serve with your choice of side, such as mashed potatoes or a fresh garden salad to complete the meal!
